The Unit comes equipped with (12) 1/3 size, 6 inch deep, polycarbonate pans for ample ingredient space. Made of sanitary, high density, NSF approved polyethylene, the extra-deep 19-1/2 inch removable cutting board provides a tough preparation surface. The stainless steel, patented, foam insulated lids keep pan temperatures colder, lock in freshness, and minimize condensation. The entire cabinet structure and solid doors are foamed-in-place using Ecomate. Ecomate is a high density polyurethane insulation that has zero ozone depletion potential (ODP) and zero global warming potential (GWP).
